Chuy Galvan – North San Diego

Chuy is currently working for Titan Wine and Spirits in San Diego and has done some consulting work for the Wine App Delectable. Prior to that he worked at SIP Wine Bar in Del Mar, California. SIP is a winebar and bistro that Executive chef Brian Redzikowski used to experiment with new and exciting dishes. Chef Redzikowski honed his skills as sous chef for Joel Robuchon at the MGM and has worked at Le Bernadin and Alain Ducasse. Prior to SIP, Chuy was at the La Valencia Hotel in La Jolla where he served as Assistant Food and Beverage Manager and Sommelier. He was responsible for the beverage program with a strong wine focus. He is a Certified Sommelier through the Court of Master Sommeliers. While at La Valencia he appeared in the San Diego Union Tribune explaining the challenges of pairing wine and food as well as elaborating on his personal wine experiences. Most recently, Chuy has served as a judge for the San Diego International Wine Competition. His career in the restaurant industry started in 2001 at Georges at the Cove in La Jolla. He was lead bartender for half his time there and eventually led to becoming the Wine Director before leaving in 2010 for the La Valencia Hotel.
